Keto Stuffed Bread

INGREDIENTS (4 servings)
MASS
▪️ 75 g of almond flour
▪️ 15 g of coconut flour 🥥
▪️ 150 g shredded mozzarella cheese
▪️ 30 g of cream cheese
▪️ 2 eggs 🥚
▪️ 2 teaspoons of xanthan gum
▪️ 1 sachet of instant yeast
▪️ 1 tablespoon dry grated Parmesan cheese (optional)
STUFFED
▪️ 250 g of ground beef 🥩
▪️ 1/2 tablespoon of olive oil
▪️ 2 cloves of garlic, minced
▪️ 50 g of mozzarella cheese 🧀 , in strands
▪️ 50 g of tomato sauce 🍅
▪️ Salt and pepper to taste

👩‍🍳 PREPARATION
1. Preheat oven to 200°C 🌡 .
2. In a frying pan with a tablespoon of oil over medium heat 🔥 Sauté the meat and garlic for 5 minutes. Add the tomato sauce and season with salt and pepper to taste. Set aside.
3. In a large microwave-safe bowl, microwave the mozzarella cheese from the dough and the cream cheese. 🧀 , at 20 second intervals, until melted (1 minute).
4. Add the eggs and mix well 🥣 . Add the dry ingredients: almond flour , coconut flour , xanthan gum, baking powder, and salt to taste. Knead with your hands. 🙌 until it forms an easy-to-work dough.
5. Divide the dough in half and place one of the rolls between two sheets of parchment paper. Roll the dough out into a rectangle and remove the top paper. Cover again, turn it over, and remove the paper underneath. Place half of the meat filling and the cheese in the center of the dough. Roll it up like a Swiss roll and close the sides of the roll. Repeat.
6. Place the loaves on a baking sheet lined with parchment paper. You can brush the tops with butter. 🧈 and sprinkle with parmesan (dry).
7. Bake for 25 minutes ⏲ or until the dough is golden brown. Let cool for 10 minutes.
