Keto Spinach Dip Rolls (Camila Kost Version)

INGREDIENTS (8 servings)
BREAD
▪️ 110 g of almond flour
▪️ 30 g of coconut flour 🥥
▪️ 70 g of cream cheese
▪️ 225 g of mozzarella cheese 🧀 , in strands
▪️ 3 eggs 🥚
▪️ 1 tablespoon baking powder
DIP
▪️ 200 g of spinach 🥬 , frozen
▪️ 50 g of cream cheese
▪️ 25 g of mozzarella cheese
▪️ 25 g of Parmesan cheese
▪️ 1 teaspoon of garlic 🧄
▪️ Salt and pepper to taste

👩‍🍳 PREPARATION
1. Preheat oven to 200°C 🌡 .
2. In a large microwave-safe bowl, heat the mozzarella 🧀 and the cream cheese in the microwave, in 20-second intervals until melted (about 1 minute).
3. Add the almond flour , coconut flour , baking powder, and eggs. Mix well. 🥣 and let it cool in the freezer ❄️ for 10 minutes.
4. Form 8 balls with the dough and freeze again for another 10 minutes.
5. Meanwhile, defrost the spinach in a pot over low heat. 🔥 (if frozen). Add the garlic, cooking for one more minute, and then the rest of the ingredients. Mix well and turn off the heat.
6. Place the dough balls around the edge of a cast-iron or ovenproof skillet (I used a 8.5-inch diameter one). Sprinkle with a little grated Parmesan cheese (optional). Fill the center with the spinach sauce.
7. Bake for 20 minutes ⏲ or until the rolls are golden brown on the surface.

💡 TIP: This recipe uses a lot of baking powder, so it is important to look for a quality one that does not have aluminum, otherwise the flavor may be bitter. 🙄 .
