Ingredients
(12 servings)
▪️ 150 g of almond flour
▪️ 30 g of coconut flour 🥥
▪️ 300 g of mozzarella 🧀, in strands
▪️ 60 g of cream cheese
▪️ 30g butter 🧈, melted
▪️ 2 eggs 🥚
▪️ 10 g (1 sachet) of baking powder
INSTRUCTIONS
1. Preheat the oven to 200°C 🌡.
2. In a large microwave-safe bowl, place the mozzarella cheese 🧀 and cream cheese. Microwave in 30-second intervals until melted.
3. In a small bowl, dissolve the instant yeast in the water and let it sit for two minutes.
4. In a third large bowl, combine the almond flour , coconut flour , and xanthan gum. Add the eggs, yeast mixture, and half of the butter . Mix until combined.
5. Add the melted cheese to the bowl of flour and mix and knead until a uniform dough forms.
6. Divide the dough into 12 balls, roll each into strips, and shape into a pretzel shape. 🥨 If the dough is cold and difficult to handle, microwave for a few seconds.
7. Place the pretzels on a baking sheet lined with parchment paper or a silicone mat. Brush the pretzels with the remaining butter 🧈 and sprinkle with salt.
8. Bake for 15 minutes ⏲ or until the dough is golden brown.

💡 TIP: In this recipe, the yeast doesn't help the dough rise... But it does make them delicious 🤤!
