Non-natural nut butters use hydrogenated oils to improve texture and also act as a stabilizer to prevent the mixture from separating.

Once ground, the mixture of fatty acids, proteins, and fibers becomes completely homogeneous. But over time, it settles, and the well-known settling of the nut occurs, with the oil remaining on top purely chemically.
