  1. Preheat the oven to 180°C and cover a baking tray with parchment paper.
  2. In a large bowl, mix the almond flour, cocoa powder, sweetener, salt, and baking soda.
  3. Add the eggs, melted coconut oil, and vanilla extract to the dry mixture. Mix until well combined.
  4. Add the unsweetened chocolate chips to the mixture and mix gently.
  5. Using a cookie scoop, form the dough into balls and place them on the baking sheet. Lightly flatten each ball with the back of the scoop to form a cookie shape.
  6. Bake for 12-15 minutes , or until firm to the touch.
  7. Let the cookies cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
